{"id":6556,"date":"2021-02-25T20:17:27","date_gmt":"2021-02-25T20:17:27","guid":{"rendered":"https:\/\/www.flushinghospital.org\/newsletter\/?p=6556"},"modified":"2021-02-25T20:17:27","modified_gmt":"2021-02-25T20:17:27","slug":"national-chili-day","status":"publish","type":"post","link":"https:\/\/flushinghospital.org\/newsletter\/national-chili-day\/","title":{"rendered":"National Chili Day"},"content":{"rendered":"<p>Today is National Chili Day and we would like to share with you a vegetarian version of this classic meal.<\/p>\n<p>The ingredients that you will need:<\/p>\n<ul>\n<li>2 tablespoons extra-virgin olive oil<a href=\"https:\/\/www.flushinghospital.org\/newsletter\/wp-content\/uploads\/2021\/02\/GettyImages-1129453654.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-6558 alignleft\" src=\"https:\/\/www.flushinghospital.org\/newsletter\/wp-content\/uploads\/2021\/02\/GettyImages-1129453654-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/flushinghospital.org\/newsletter\/wp-content\/uploads\/2021\/02\/GettyImages-1129453654-300x200.jpg 300w, https:\/\/flushinghospital.org\/newsletter\/wp-content\/uploads\/2021\/02\/GettyImages-1129453654-768x512.jpg 768w, https:\/\/flushinghospital.org\/newsletter\/wp-content\/uploads\/2021\/02\/GettyImages-1129453654-1024x683.jpg 1024w, https:\/\/flushinghospital.org\/newsletter\/wp-content\/uploads\/2021\/02\/GettyImages-1129453654-450x300.jpg 450w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/li>\n<li>1 medium onion, chopped<\/li>\n<li>1 large bell pepper, chopped<\/li>\n<li>2 medium carrots, chopped<\/li>\n<li>\u00bd teaspoon salt, divided<\/li>\n<li>4 cloves garlic, pressed<\/li>\n<li>2 tablespoons chili powder<\/li>\n<li>2 teaspoons ground cumin<\/li>\n<li>1 \u00bd teaspoons smoked paprika<\/li>\n<li>1 teaspoon dried oregano<\/li>\n<li>1 large can ( 28 ounces ) diced tomatoes with their juices<\/li>\n<li>2 cans ( 15 ounces ) black beans, rinsed and drained<\/li>\n<li>1 can ( 15 ounces ) pinto beans, rinsed and drained<\/li>\n<li>2 cups vegetable broth or water<\/li>\n<li>1 bay leaf<\/li>\n<li>2 tablespoons chopped fresh cilantro<\/li>\n<li>1 to 2 teaspoons sherry vinegar or red wine vinegar or lime juice<\/li>\n<li>Garnishes: chopped cilantro, sliced avocado, tortilla chips, sour cream, grated cheddar cheese<\/li>\n<\/ul>\n<p>In a large heavy-bottomed pot over a medium heat warm the olive oil until it simmers<\/p>\n<p>Add the chopped onion, bell pepper, carrot, celery and \u00bc teaspoon of salt<\/p>\n<p>Stir to combine to combine and then stir occasionally for about 7 \u2013 10 minutes<\/p>\n<p>Add the garlic, chili powder, cumin, smoked paprika and oregano<\/p>\n<p>Cook for about a minute<\/p>\n<p>Add the diced tomatoes and their juices, the rained black beans and pinto beans, vegetable broth and bay leaf. Stir to combine and let mixture simmer for about 30 minutes.<\/p>\n<p>Remove chili from the heat and take out the bay leaf. For the best texture and flavor, transfer 1 \u00bd cups of the chili to a blender. Blend until smooth watch out for hot steam. Pour the blended mixture back the pot.<\/p>\n<p>Add the chopped cilantro, stir to combine and them mix in the vinegar.
