{"id":2729,"date":"2017-03-22T15:07:28","date_gmt":"2017-03-22T15:07:28","guid":{"rendered":"http:\/\/flushinghospital.org\/newsletter\/?p=2729"},"modified":"2024-05-09T03:33:10","modified_gmt":"2024-05-09T03:33:10","slug":"healthy-veggie-alternative-to-meatballs","status":"publish","type":"post","link":"https:\/\/flushinghospital.org\/newsletter\/healthy-veggie-alternative-to-meatballs\/","title":{"rendered":"Healthy Veggie Alternative to Meatballs"},"content":{"rendered":"<p>Last week we posted that Flushing Hospital Medical Center (FHMC) hosted a \u00a0Healthy Recipe Makeover Contest.<\/p>\n<p>Below is the WINNING recipe.<\/p>\n<p>Ingredients:<\/p>\n<p>2 \u2013 Eggplants, (peeled and chopped)<\/p>\n<p>2 \u2013 Packages of button mushrooms (chopped)<\/p>\n<p>1 \u2013 Onion (finely chopped)<\/p>\n<p>2- Cloves of garlic (finely chopped)<\/p>\n<p>2- Large Egg White (lightly beaten)<\/p>\n<p>1 \u2013 Teaspoon dried oregano<\/p>\n<p>1 \u2013 Cup bread crumbs (whole wheat)<\/p>\n<p>\u00bd cup \u2013 Parmesan Cheese<\/p>\n<p>Directions &#8211;<\/p>\n<p>Saut\u00e9 Eggplant, mushroom, onions and garlic until soft (let cool)<\/p>\n<p>Combined Oregano, breadcrumbs and Parmesan Cheese<\/p>\n<p>Add all of the above ingredients together.<\/p>\n<p>Form into inch balls bake at 350 degrees for 25 minutes<\/p>\n<p>Place in sauce and enjoy..<\/p>\n<p>Our winner\u00a0assures us that &#8220;No one will know they are meatless until they bite into them.&#8221;<\/p>\n<p class=\"disclaimer\">All content of this newsletter is intended for general information purposes only and is not intended or implied to be a substitute for professional medical advice, diagnosis or treatment.
