Recipe courtesy of<a href=\"http:\/\/www.diabeticlivingonline.com\/recipe\/pies\/berry-pie-with-creamy-filling\" target=\"_blank\" rel=\"noopener\"> Diabetic Living<\/a>.<\/p>\n<p>Ingredients<\/p>\n<ul>\n<ul>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">2 <\/span>cups <\/span><span class=\"name\">plain fat-free Greek yogurt<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">2 <\/span>tablespoons <\/span><span class=\"name\">powdered sugar<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">1\/2<\/span> teaspoon <\/span><span class=\"name\">vanilla<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"name\">Nonstick cooking spray<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">1 1\/3<\/span> cups <\/span><span class=\"name\">finely crushed rusk (10 to 12 slices) or zwieback (about 17 slices)<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">2 <\/span>tablespoons <\/span><span class=\"name\">packed brown sugar<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">1 <\/span><\/span><span class=\"name\">egg white, lightly beaten<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">2 <\/span>tablespoons <\/span><span class=\"name\">butter, melted<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">3\/4<\/span> cup <\/span><span class=\"name\">low-calorie cranberry-raspberry drink<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">1 <\/span>tablespoon <\/span><span class=\"name\">cornstarch<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">6 <\/span>cups <\/span><span class=\"name\">fresh raspberries, blackberries, blueberries, and\/or halved strawberries<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"name\">Fresh mint sprigs and\/or Lemon Cream** (optional)<br \/>\n<\/span><\/span><\/li>\n<\/ul>\n<\/ul>\n<div class=\"ingredientmeasure bordertop\">** Lemon Cream:<\/div>\n<ul>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">1 1\/2<\/span> cups <\/span><span class=\"name\">frozen light whipped dessert topping, thawed<br \/>\n<\/span><\/span><\/li>\n<li><span class=\"ingredient\"> <span class=\"amount\"><span class=\"ingredientmeasure count\">3\/4<\/span> teaspoon <\/span><span class=\"name\">finely shredded lemon peel<br \/>\n<\/span><\/span><\/li>\n<\/ul>\n<\/div>\n<div class=\"clear\">\u00a0Directions<\/div>\n<div class=\"direction\">\n<ol>\n<li><span class=\"instructions\"> <span class=\"direction-item-header\">For yogurt cheese:<\/span> <span class=\"direction-item-content\">In a small bowl, combine yogurt powdered sugar, and vanilla. Cover and chill until ready to use.<\/span><\/span><\/li>\n<li><span class=\"instructions\"> <span class=\"direction-item-content\">Preheat oven to 350 degrees F. Coat a 9-inch pie plate with nonstick cooking spray. In a medium bowl, combine finely crushed rusk and brown sugar. Add egg white and melted butter; stir until well mixed. Press mixture evenly onto bottom and up side of prepared pie plate. Bake for 10 to 12 minutes or until edge is browned. Cool completely on a wire rack.<\/span><\/span><\/li>\n<li><span class=\"instructions\"> <span class=\"direction-item-header\">Meanwhile, for glaze:<\/span> <span class=\"direction-item-content\">In a small saucepan, stir together cranberry-raspberry drink and cornstarch. Cook and stir over medium heat until thickened and bubbly; cook and stir for 2 minutes more. Remove from heat. Transfer to a small bowl. Cover surface with plastic wrap; let stand at room temperature for 1 to 2 hours or until cooled.<\/span><\/span><\/li>\n<li><span class=\"instructions\"> <span class=\"direction-item-content\">Spread yogurt mixture into crust-lined pie plate. In a large bowl, gently toss berries and cooled glaze. Spoon over yogurt mixture. Cover; chill for 3 to 6 hours before serving. If desired, garnish with fresh mint and\/or serve with Lemon Cream.
